Healthy Fruit Icypoles

Here in Australia, the weather is heating up just in time for the New Year. Summer is filled with days by the beach, the smell of mowed lawns and the nostalgic sounds of Mr. Whippy. For a healthier spin on icecream and icypoles to beat the summer heat, I’ve created these fruity icypoles.


Ingredients (Makes 4):

  • 3-4 passionfruits
  • Coconut water
  • Raspberries
  • Blueberries
  • Greek yogurt (we used passionfruit)

Method:

  1. Halve the passionfruits and scoop the pulp into the bottom of the icy pole moulds. They should go 1/4 of the way up. 
  2. Pour coconut water as needed to fill 3/4 on the mould with coconut water. 
  3. Place as many blueberries and raspberries as desired/can fit into the moulds, allowing them to sink throughout the liquid. 
  4. Dollop a teaspoon of Greek yogurt on top of the liquid mixture and cover with the icy pole handles.
  5. Allow to freeze for 2 hours before enjoying. Run the moulds under hot running water to loosen the icypole.

These icypoles are kid friendly and are a great way to get them involved in the kitchen. They are so easy to make in advance and can be stored in the freezer until needed. Plus, they are full of healthy fruit and coconut water which is packed full of essential electrolytes.

Leftover Brioche French Toast

French Toast has always been a treat in our family. We even called it ‘eggy bread’ as we were growing up, and it was made as a savoury dish instead of a sweet. Today, I’ve made a sweet, caramelised French Toast from Christmas leftovers.

For our Christmas lunch we made a delicious stuffing dish from Brioche bread to have with roast chook. We had a whole loaf left over which I thought would be delicious as a Boxing Day breakfast .

Additionally, I made a healthier version of French Toast, which can be modified to be vegan if desired. It is lower in refined sugar than traditional recipes. Thus, there’s no reason to feel guilty to eat this breakfast after stuffing yourself full at Christmas.

Ingredients:

For berry sauce:

  • 1/2 chopped fresh mixed berries (I used raspberry, blueberry and strawberry)
  • 1 Tsp brown sugar
  • 1 Tbs water

For French Toast:

  • 3 slices of Brioche bread (can be substituted for vegan sweet bread)
  • 1 egg (can be substituted for a flax egg)
  • 1/2 cup of almond milk
  • 1 Tbs cinnamon 
  • 1 Tsp nutmeg

Method:

  1. Combine all the berry sauce ingredients in a medium saucepan over low heat. Stir occasionally until the berries have reduced into a sauce. Allow to cool.
  2. Combine the egg, almond milk, cinnamon and nutmeg in a mixing bowl.
  3. Soak the Brioche in the bread until saturated. Heat some butter (coconut oil if vegan) in a medium frypan over medium heat.
  4. Place the soaked pieces of bread in the frypan and cook until golden on each side (about 5 minutes).
  5. Serve the French Toast warm with the berry sauce poured on top.
